The more I experiment with the nearly-impossible-to-spell, zero carb erythritol, the more I’m a believer.
Having invested in a big bag of this granulated, non-GMO sugar substitute, I’ve been looking for ways to try it out.
The holidays made the perfect time to adapt this highly rated Allrecipes Cranberry Sauce in a very low sugar version, the only sugar being from orange juice and whatever fresh cranberries have.
This sauce is great mixed with cottage cheese, eaten alone, in a smoothie, or for the other usual uses. I’ll be making it year round as it’s so tasty.
Low Carb Tart Cranberry Sauce
Ingredients
- (1) 12-oz bag of fresh cranberries, washed
- 1 cup organic Swerve or other brand of organic erythritol*(Note: it has 70% of the sweetness of sugar, but this makes the sauce tarter than usual which is nice.)
- 1 cup organic juice
- 1 tsp Orange zest if you used fresh oranges
Directions:
Mix the erythritol and orange juice in a sauce pan over medium heat until the erythritol is dissolved. Add the cranberries and optionally orange zest. Cook until the cranberries pop (which is super fun to watch).
Remove from heat and place in a covered glass bowl or container. I use a large Mason jar.
Refrigerate. It will get thick.
